BREAKFAST MENU - BUBUR MANADO /MANADONESE PORRIDGE


It started with me and now the whole family were contracted with fever and flu.

My kid's loss appetite to eat so the best alternative that mom could think of is porridge. I made this manadonese porridge for breakfast today.

Manadonese /Tinutuan is a traditional dish from Manado, North Celebes. It is made from rice and vegetables such as spinach, water spinach, lemon basil, sweet corn and pumpkin or you can simply use your favorite vegetables. This porridge is hearty, contains a lot of fiber and also a good energy source food.

There are some similarity with teochew porridge, if the authentic teochew porridge used sweet potatoes in the porridge, this Manadonese Porridge used pumpkin and tapioca. This porridge is normally serve as breakfast and serve best with salted fish and Sambal Tomato.


Ingredients:
2 cups  uncooked rice, washed and drained
1400 ml water
½ tsp salt
2 stalks lemongrass, outer layers discarded, inner part bruised
200 gr pumpkin, diced 1×1 cm
1 cob of sweet corn, scrape to kernels
200 g tapioca diced
100 gr spinach leaf
50 gr water spinach leaf
80 gr lemon basil
50 gr fried jambal salted fish
Sambal:
3 tbs oil
12 red chilies, sliced
4 shallots, sliced
1 tomato, sliced
Fried salted fish
1 tsp lime juice or lemon cui (citrus limonia)
Directions:
  1. Place rice in a pot. Add water, salt, lemongrass and bring to boil
  2. Add tapioca and pumpkin, stir and bring back to boil until the pumpkins and tapioca tender.
  3. Add spinach leaf, water spinach, corn and lemon basil. Reduce heat to low and stir frequently. Continue boil until all the ingredients well cooked and turn into porridge consistency.
  4. Sambal : Stir fry the chilies, shallots and tomato with olive oil and set aside. Mix it with fried jambal salted fish and grind it with mortar and pestle or food processor. Drizzled with lime juice and stir.
  5. Serve the porridge hot with fried  salted fish and sambal.

Satu rumah sudah berjangkit, anak beranak sudah demam dan batuk-batuk, musim demam agaknya. tekak tak selera nak makan, air pula minum bergelen-gelen. Dalam situasi demam dan tiada selera makan ..jawapan pada tambahan tenaga sudah pasti makanan orang sakit...BUBUR... tapi pagi ini special sikit saya import dari Manado, Indonesia...saya masakan anak-anak bubur Manado, kebetulan ada labu dan ubi kayu jadi saya campak semua kedalam bubur ini.

Bubur Manando ini cukup terkenal di Pulau Sulwesi Utara..malah ianya merupakan sajian sarapan pagi yang boleh didapati di warong-warong tepi jalan mahupun di restuarant. Menariknya bubur ini ianya banyak menggunakan sayuran seperti labu, ubi kayu, jagung, kakngkung dan sayur bayam,. Semuanya direbus sekali dan dihidangkan bersama ikan masin dan sambal tomato.

Walaupun semuanya sakit hari ini tapi kita orang masih sempat merantau ke Pulau Sulawesi, bagi anda di sana tak perlu tunggu sakit baru nak cuba bubur ini...cukup bahan di dapur test tenguk boleh ngam tak dengan anak tekak.
