CRUNCHY NESTUM AND CORNFLAKES COOKIES

I bookmarked several recipes on SAJI - Foodie Magazine August 2011 and the one I wanted to make immediately was her this Nestum-Cornflakes Cookies. I love cookies with cornflakes. It will definitely made the cookies crispy and crunchy.


It was true the cookies were golden and crisp around the outside edges, while the inside was rich, chewy and packed with nuts.  Without a doubt the texture was best warm from the oven, but I found that 15 seconds in the microwave for day old cookies nearly replicated that fresh-from-the-oven appeal.  I think this cookie would be a great as a festive cookies. You can decorate with chocolate drizzles.


INGREDIENTS

150 g butter / 150 g mentega
200 brown sugar / 200 g gula perang
200 g flour / 200 g tepung gandum
50 g cornflour / 50 g tepung jagung
15 g milk powder / 15 g susu tepung
50 g nestum / 50 g nstum
50 g cornflakes - crushed / 50 g cornflakes dihancurkan
1 egg yolk / 1 biji telur kuning
1/2 tsp vanilla essence / 1/2 sdt esen vanilla
1 cup chopped almond/ 1 cawan badam cincang


PREPARATIONS


  • Preheat oven to 375 F.  Line two baking sheets with parchment paper./Panaskan ketuhar 375 F dan leserkan acuan pembakar
  • In a medium bowl, whisk the flour,cornflour baking powder, milk powder cornflakes, nestum and salt together. / Satukan tepung, baking powder, tepung jagung susu tepung nestum, cornflakes dan garam dalam satu bekas.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and  sugars on medium speed until light and fluffy, about 3-4 minutes. / Pukul mentega dengan gula sehingga ringtean
  • Add the eggs and  beat until combined / Masukkan telur dan pukul sehingga sebatiAdd the vanilla and beat for another minute, until everything is completely combined. Finally add in the dry ingredients and chopped almond /. Akhir sekali masukkan bahan-bahan kering dan badam cincnag dan gaul sehingga terbentuk doh


  • Rest dough for 30 minutes / Rehatkan doh selama 30 minit.
  • Roll dough and use circle cookie cutter./ Canai dan terap menggunakan bentuk kesukaan anda.
  • Bake for 15-20 minutes /Bakar selama 15-20 minit

Biasanya cookies-cookies ni dibuat semasa Hari Raya aje, jarang sekali saya membuat cookies pada hari biasa melainkan atas permintaan anak-anak untuk membawa ke campus. Dan selalunya bila tiba hari raya banyaklah majalah-majallah masakan terjual ialah masing-masing sibuk hendak mencari resipi cookies baru atau pun mencari trend-trend cookies terkini.


Begitu juga saya walaupun dalam senarai sudah ada cookies yang wajib dibuat tetapi kekadang tu teruja juga bila dah tenguk cookies-cookies yang cantik di majalah. Dulu saya tidak begitu confident dengan resipi-resipi di majalah tetapi kini kebanyakan majalah membuat penampilan khas pakar-pakar untuk berkongsi resipi, keyakinan itu bertambah. Alhamdulilah setakat ini kebanyakan yang sudah saya cuba menepati citarasa dan menjadi.  Nestum-Cornflakes cookies ini adalah salah satu daripadanya. Saya dapatkan resipi ini dari majalah SAJI keluaran August 2011. Melihat pada ramuan aje saya udah agak ianya pasti ranggup.....ternyata memang ranggup, cuma hasil tangan saya kurang memuaskan sedikit kerana apa yang saya lihat di majalah begitu "golden" tapi cookies saya ini agak sembam sedikit. Tapi apa pun pokoknya mesti sedap.
