WATERMELON CUPCAKES WITH SWEET WATERMELON BUTTERCREAM

Every time my youngest daughter has her sleep over and study group she will request and extend her assistance for me to prepare her cupcakes. So far I had made 5 cupcakes for the group.

This time around I wanna make a little bit cheerful, something sweet, something pinkish, something exciting....that suit the mood and environment of young teenage girls.

Well I made them pink, watermelon cupcakes. I found the recipe couln't remember is either mybaking addiction.com  or some other blog. I've forgetten to note down the blog link. I don't really have all the ingredients call for the recipe however I substituted some with what ever I had. Look's cute and interesting. So if you wish to have something sweet...something pinkish ..... and something interesting....here's the watermelon cupcake recipe.
Watermelon Cupcakes with Sweet Watermelon Buttercream
Makes 2 1/2 dozen
 
Ingredients
FOR THE CUPCAKES
1 cup (2 sticks) unsalted butter, softened
2 cups sugar
3 eggs
1 dram (1 teaspoon) watermelon flavoring oil
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 – 16 ounce container (about 2 cups) sour cream
Food coloring (optional)

FOR THE FROSTING
6 tablespoons unsalted butter, softened
1 dram (1 teaspoon) watermelon flavoring oil
1 tablespoon lemon juice
3 tablespoons milk
5 to 6 cups confectioners’ sugar
Food coloring (optional)

  • To make the cupcakes: Preheat the oven to 350 degrees and line to muffin pans with cupcake liners.
  • Sift the flour, baking soda, baking powder, and salt together in s small bowl; set aside.
  • In a large bowl, or the bowl of a standing mixer, cream the butter and sugar together until light and fluffy. Add the eggs, one at a time, mixing well between each addition and scraping the bowl as needed. Stir in the watermelon flavoring. Add about a third of the flour mixture and beat on medium speed until just mixed. Add half of the sour cream, beating until just mixed. Repeat this process with the remaining flour mixture and sour cream. Add color as desired.
  • Place two tablespoons batter into each cup of lined muffin pans and bake at for 20 minutes, or until a toothpick inserted in the center comes out with one or two crumbs clinging to it.
  • Allow to cool completely before frosting.
  • To make the frosting:  In a large bowl, cream together the butter and about a third of the confectioners’ sugar. Stir in the milk and mix thoroughly before beating in another third of the confectioners’ sugar. Next stir in the lemon juice and the remaining sugar, beating until well mixed and light and fluffy. Add all of the watermelon flavoring. If the frosting is too soft, add more sugar, as needed. Add coloring as desired.

Hem setiap kali anak dara yang bongsu ni ada sturdy group dan sleep over di rumah kawan atau di rumah, cupcakes adalah permintaan dia orang. Suka sangat,yang paling suka ialah saya, inilah peluang nak keluarkan idea...idea..... Kali ini saya pilih tema yang bersesuian dengan si gadis sunti... sesuatu yang manis....sesuatu yang lembut.... dan sesuatu yang menarik. Maka keluar lah pilihan Watermelon Cupcakes in dari Darla... cukup sweet...warnanya.... 

Ada ramuan yang diperlukan tidak dapat saya cari jadi saya gantikan dengan apa yang ada...janji matlamat tercapai...hasil tidak lari dari sasaran. Menarik tentang watermelon ini dalam adunanya dimasukkan manik-manik chocolate bagi menampak seakan-akan biji tembikai, tapi saya tidak dapat cari manik-manik chocolate yang sebesar jamu jadi saya gantikan dengan chocolate chips...ok jugalah...Kepada yang mempunyai anak dara sunti yang sukakan kelembutan... resipi ini sesuai bangat.

Assalam kak paty..makin laju kita tengok akak mengupdate menu2 yg sedap2..kita juga yang sekarang ada sikit slow down..huhu..maklum ler dah pertengahan tahun budak2 nya periksa are around the corner..

Salam Ayu, akak kena laju sebab banyak masak dalam bulan puasa ni, kalau tak update nanti lupa... itu pun udah banyak tertinggal.
Ya ayam goreng tu memang sedap itu copycat recipe dari restuaran Nasi Beratur Penang. Akak main agak ikut lidah aje...pas ni Ayu boleh adjust ikut taste Ayu. Sedap makan dengan cili hijau dipatah-patahkan. Thanks Ayu kerana mencuba and believe in my piece of work
