CHICKEN PONGTEH / AYAM PONGTEH - NYONYA SOY BRAISED CHICKEN


I've heard about this Nyonya/ Peranakan recipe so much but have yet tasted it. Recently I saw Chef Wan in BEST WAN making this Chicken Pongteh and out of curiosity I made this dish.

Generally in this recipe chickens are stew cooked with fermented soybean paste, potatoes and shiitake mushrooms

If you love the spicy aroma you can add cinnamon quill, cardamon and cloves, however some prefer it plain without the spices, anyway all depend on one preference.
 
For the above portion, I used below ingredients:

1/2 Chicken cut into 8 smalL pieces
3 Potatos cut in wedges
5 Chinese Dried Mushroom  -shitake mushroom soak in water to soften it.
8-10 Shallots
4-5 Garlic
2 Tbsp of Minced Bean Paste (Taucu)
1 cinnamon stick
3 cardamon
3 cloves
Dark Soy Sauce
Gula Melaka (enough to make the gravy taste sweet)
Salt (add to taste)
Water for gravy

PREPARATIONS:
  1. Pound Shallots and Garlic.
  2. Saute till soft and fragrant. Add the dried spices.
  3. Clean, removed skin and cut the chicken into bite size pieces. Pat dry.
    Add in the fermented bean paste, stir fry until fragrant. Add in the chicken pieces and potato continue to stir-fry and until chicken changes to pale color. Put in the water.
  4. Bring it up to a boil, turn down the heat, cover and continue to simmer for 10 minutes. Add in the mushroom. Continue to simmer for 10 minutes.Add in sugar, black soy sauce. Continue to shimmer until gravy thickens, chicken is cooked and potatoes tender. Check seasoning.
  5. Serve with warm rice.

Satu lagi resipi yang dilhamkan dari program Chef Wan - BEST WAN, masakan peranakan, Ayam Pongteh. Saya banyak mendengar tentang resipi ini tetapi tidak pernah merasa atau mencubanya sehinggalah selepas menonton program Chef Wan, saya jadi tertarik mencubanya. Uniknya resipi ini rupanya macam ayam masak kicap tetapi rasanya macam masak taucho kerana resipi ini  menggunakan taucho. Ada juga resipi yang memasukkan kulit kayu manis, cengkih dan buah pelaga. Combinasi kicap, taucho dan rempah ratus nampak agak pelik tetapi itulah dia masakan kegemaran BABA NYONYA. Bagi yang tidak tahan masakan pedas bolehlah mencuba resipi ini.
