TODAY LUNCH MENU - UDANG MASAK LOMAK CILI PADI NENAS, SWEET SOUR CHICKEN AND STIR FRIED STRING BEANS RED CURRY PASTE

I only cook lunch when ever it's a holiday or when ever I'm on leave. I'm off today and tomorrow to send Tyca off this Saturday. She needs a little bit of help to do some last minutes shopping so I have to do the driving for her. Since I have the time I cooked lunch for the children their favorite, Shrimp in Yellow Coconut Curry aka Masak Lomak Udang Nenas, Sweet Sour Chicken for Myraz who is allergic to seafood and my favorite Stir Fried String Beans with Red Curry Paste- Thai Style.







SHRIMPS IN YELLOW CURRY COCONUT WITH PINEAPPLE/ MASAK LOMAK UDANG DAN NENAS

INGREDIENTS
1 kg shrimps - medium size / 1 kg udang
2 lemongrass crushed / 2 batang serai  crushed
1 turmeric leaf sliced thinly / 1 helai daun kuntit dihiris nipis-nipis
2 cups thick coconut milk / 2 cawan santan pekat
1 cup water / 1 cawan air
1/2 tsp chicken bouillon / 1/2 sdt swerbuk pati ayam
2 slice pineapple - slice into bite size / 2 potong nenas hiris kecil
salts to taste/ garam secukup rasa.

For the Paste
23 bird's eyes chilies / 23 biji cili padi
1 onion/ 1 biji bawang besar
2" turmeric root / 2" kunyit hidup

Blend all ingredients into wet paste / Blend semua bahan sehingga halus.

PREPARATIONS
In a pot add coconut milk, water, and paste. Bring to boil. Add in lemongrass. Simmer for 5 minutes and add in shrimps. Add salts and bouillon. Simmer until shrimps are done. Before remove from heat add in the sliced turmric leaf. / Dalam periuk didihkan santan, air , bahan giling dan serai. Biar mendidih sebentar, kemudian masukkan udang dan nenas. Masak sehingga udang masak. Masukkan garam dan adjust rasa.

Saya jarang masak tengah hari, cuma kalau cuti dan ada kelapangan baru saya siapkan makanan tengah hari. Kebetulan hari ini dan esok saya bercuti untuk membuat persiapan Tyca maka hari ini ada sajian tengah hari. Saya masak lomak cili padi udang bersama nenas, Sweet Sur Chicken untuk Myraz yang tidak makan seafood dan Kacang Panjang goreng cili merah ala Thai. Walaupun kombinasi masak lomak tidak begitu kena dengan sweet sur chicken tetapi masak lomak dengan kacang panjang goreng cukup untuk membangkitkan selera.
