STEAM SEABASS NYONYA STYLE / SIAKAP KUKUS NYONYA

If you are looking for easy delightful Nyonya style steam Fish to satisfy your spicy and sour cravings, you might want to try the recipe below. Lay your hand on this delicate recipe, it sure to satisfy your craving!!!

Ingredients:
1 sea bass (about 700g), cleaned / 1 ekor ikan siakap dibersihkan
2 string "laksa leave aka daun kesum / 2 tangkai daun kesum
1 ginger flower / 1 kuntum bunga kantan
1 lemongrass crushed / 1 batang serai dititik
2 tablespoon coriander leaves, chopped/daun ketumar di cincang
3 tbsp oil / 3 sdb minyak masak
5 tbsp lime juice / 5 sdb jus limau
2 kaffir leave sliced thinly / 2 helai daun limau purut hiris nipis-nipis
salts and sugar to taste/ garam dangula secukup rasa
Spices:
15 dried chilies soaked - 15 tangkai cili kering direndam
5 bird's eye chilies / 5 biji cili padi
1 onion / 1 biji bawang besar
5cloves garlic /5  ulas bawang putih
5 candlenuts / 5 biji buah keras
2" turmeric root / 2" kunyit hidup
1" shrimp paste / 1" belacan

Blend all ingredients into wet paste and set aside / Blend semua bahan dan letak sebelah.

PREPARATIONS
  1. Wish fish throughly, spread salts and peppers and steam for 15 minutes./Bersihkan ikan, lumur dengan lada dan garam. Kukusselama 15 minit.
  2. In another wok, heat up oil and fry the blended ingredients till fragrant, Add in ginger fllower and Laksa leaves. Add 1/2 cup of water, salts, sugar and lime juice. Adjust taste./ Dalam periuk yang klain panaskan api dan tumis bahan giling sehingga naik baunya. Masukkan bunga kantan dan daun kesum. Masukkan 1/2 cawan air, garam, gula dan air limau. Adjust rasa. Renehkan beberapa minit.
  3. Pour cooked spices ingredients and pour into steam wish. Cook for another 10 minutes and remove. garnish with chopped coriander leaves and sliced kafir leaves. ready to serve./ Padamkan api dan curahkan keatas ikan kukus. Kukus lagi 10 minit. Padamkan api dan taburkan daun ketumbar dan daun limau perut ke atas ikan. Siap untuk dihidang.
