WATER CRESS FRITTERS / CUCUR SAYUR - SELADA AIR.

This is actually a vegetable fritters recipe. You can make these Malaysian-style fritters with virtually any raw vegetable, though broccoli or cauliflower, greens, and eggplant must be cooked first.

Other vegetables that can be used are: grated sweet potatoes, carrots or parsnips, winter squash,  sliced or chopped okra, celery (use the leaves too), mushroom,  asparagus, chilies or bell peppers, bean sprouts, green beans, or sugar snap or snow peas; or use whole shell peas.
Perfect for breakfast or tea. Method of preparing this fritters are the same as making "cucur udang". Serve best with chili sauce.
INGREDIENTS
For this recipe I used water cress / Selada Air
For The Batter
3 cups flour / 3 cawan tepung
1 tsp baking powder / 1 sdt baking powder
3 tbsp rice flour / 3 sdb tepung beras
salts to taste / garam secukup rasa
sufficient water for the batter / air secukupnya
oil for deep frying / minyak untuk menggoreng.
PREPARATION
Mix all the ingredients and add in water to form batter. Not to thick and not to thin. Add in water cress. Used ladle to scoop the batter and deep fried till brown. Drain oil and serve with chili sauce./ Campurkan semua bahan dan masukkan air sedikit demi sedikit.
